Method

1.Heat the chicken stock in a medium saucepan. Add the star anise, ginger, lemongrass, parsley, chilli (if using) and sesame oil, then simmer for 5 minutes.
2.Add the chicken breast and reduce the heat. Cook for 5-8 minutes until the chicken feels firm. Remove chicken and allow to rest before slicing.
3.Reheat the stock, after removing the parsley, chilli and lemongrass, and cook the noodles, bok choy and spring onion for 2 minutes until bright green and tender.
4.Divide the noodles and vegetables between the bowls, then top with the chicken. Add some broth and garnish with sesame seeds.
