Fortune cookies

1.Preheat oven to 180°C/160°C fan forced. Draw 4 x 8cm diameter circles on a large piece of baking paper; place paper, marked-side down, on a lightly greased baking tray.

2.Whisk egg whites, sugar and vanilla in a medium bowl until thick and well combined. Add butter, whisking until well combined. Stir in sifted flour.

3.To cook 4 at a time, place heaped teaspoons of mixture at the centre of each circle; spread mixture to edge of circle. Bake for 6-7 minutes or until golden at the edge. Working quickly, remove cookies with a spatula; place a message at the centre of each cookie. Fold cookie in half, enclosing message. Press edges to seal, then mould over the edge of a glass to form a horseshoe shape. Hold for a few seconds or until set.
