Method
1.Preheat oven to very hot 220°C (200°C fan-forced). Lightly grease a baking tray.
2.Sift flour into a large bowl. Add butter. Using fingertips, lightly rub in until well combined. Stir in sultanas and sugar.
3.Make a well in the centre of flour mixture. In a jug, whisk together milk and egg. Pour into well all at once, reserving 1 tablespoon. Using a palette knife, quickly mix to soft, sticky dough. Do not over-mix.
4.Turn onto a lightly floured surface. Knead lightly. Break dough into 9 even-sized pieces. Roll into finger-bun shapes.
5.Place buns close together on prepared tray. Brush with reserved milk mixture. Bake 12-15 minutes, until buns sound hollow when tapped.
6.Remove from oven. In a jug, combine water and caster sugar and brush over buns. Allow to cool on a wire rack.
7.To make icing: in a bowl, combine icing sugar, water and butter. Add food colouring, as desired, and mix well. Spread a strip down the centre of each bun.
