Method
1.Preheat oven to 180°C/160°C fan forced. Grease and line a baking tray with baking paper.
2.Combine mince, egg, cornflour, carrot, zucchini and sauce in a bowl. Using clean damp hands, mix together until combined. Place bread slices on prepared tray. Divide mince mixture among bread slices, then spread mixture evenly over bread to cover. Sprinkle with parmesan.
3.Bake for 15 minutes or until bread is crisp and mince is golden and cooked. Cut each slice into 4 fingers. Arrange chicken sticks in a crisscross pattern on serving plates. Serve chicken sticks with salad.
