Classic surf and turf
1.Brush steaks with oil and season to taste. Set aside 10 minutes to come to room temperature.
2.Preheat barbecue grill on high. Cook steaks 4-5 minutes each side for medium, or to your liking. Set aside, loosely covered with foil, 5 minutes.
Sauce
3.Meanwhile, melt butter in frying pan on medium, until sizzling. Add garlic and chilli and cook 1 minute, until softened (do not allow to burn). Pour in beer and increase heat to high. Simmer 3-4 minutes, until reduced by two-thirds. Stir in cream and simmer gently 1-2 minutes, until slightly thickened. Season to taste and keep warm. Stir parsley through.
4.Brush prawns and tomatoes with extra oil and season to taste. Grill prawns 1 minute. Turn over and add tomatoes to grill. Cook a further 1 minute, until prawns change colour completely and tomatoes blister slightly.
5.Top each steak with 3 prawns and spoon sauce over to serve. Accompany with tomatoes.
