Method
1.Combine onion, water, sugar, vinegar, cinnamon and cloves in a large saucepan. Cook on medium heat 4-5 minutes, until onion is tender.
2.Add beetroot and sultanas. Simmer 15-20 minutes, until thickened slightly. Stir parsley through. Allow to cool. Serve.
Alternatively, you could bake your own beetroot. Scrub beetroot carefully and wrap individually in foil. Bake beetroot 40-60 minutes, or until tender when pierced with a skewer.
