1.Place beef in a medium bowl. Add marinade and oil; toss to coat. Stand for 5 minutes to marinate. Drain. Thread beef onto 12 skewers.
2.Meanwhile, cook noodles in a medium saucepan of boiling salted water for 3-5 minutes or until tender. Drain. Refresh under cold water. Transfer noodles to a large bowl. Add coleslaw mix, coriander and peanuts. Toss to combine. Whisk satay sauce, juice, fish sauce and 1/4 cup water in a medium jug. Add to noodle mixture; toss to combine.
3.Preheat an oven-grill to high. Place skewers on a baking tray. Grill for 2 minutes each side or until cooked. Serve skewers with satay noodles and topped with extra coriander.
