Method
1.Pour simmer sauce into a large saucepan. Pour a little water into jar; replace lid and shake to loosen residual sauce. Add to saucepan.
2.Cut racks into sections of 2-3 ribs, depending on size, to make even portions. Add to pan and turn to coat with sauce. Cover and bring slowly to boil. Reduce heat to very low and simmer gently for 1 hour.
3.Preheat barbecue plate to medium. Remove ribs from sauce and barbecue for 4-5 minutes each side, until well browned. Meanwhile, cook rice according to packet directions.
4.Reheat sauce. ribs with sauce, rice and salad.
These ribs can be cooked in sauce up to 1 day in advance. Chill until ready to barbecue.
