Method

1.Cook chorizo in heated oiled large frying pan, in batches, until browned. Drain on absorbent paper.
2.Combine mayonnaise and paprika in small bowl.
3.Split panini in half; spread mayonnaise mixture over roll halves. Top with chorizo, egg, spinach, cheese and remaining panini half.

Use a whole-egg mayonnaise for the best flavour. Manchego cheese is Spanish; it is available from specialist cheese stores and Spanish delicatessens. If you can’t find it, use parmesan cheese instead. Use a vegetable peeler to shave the cheese.
