Preheat an air fryer to 200°C. Coat fryer basket with cooking spray.

Stir together cornflour, sugar, pepper, and garlic powder in a shallow dish. Put buttermilk in another shallow dish and cornflakes in a third shallow dish. Sprinkle chicken with salt, then dredge in cornflour mixture, shaking off excess. Dip in buttermilk, allowing excess to drip off, then roll in cornflakes to coat.

Coat chicken with cooking spray and transfer to prepared basket. Cook, turning halfway through, for 8 minutes or until golden and cooked through.
You can also cut the chicken into strips for air fryer chicken tenders, but cook those 2-3 minutes longer.
