Orange flavoured mascarpone
Method
1.Preheat oven to 180°C/350°F.
2.Combine ingredients in large shallow baking dish. Roast, uncovered, about 20 minutes or until rhubarb is just tender.
3.To make orange flavoured mascarpone, combine cheese, rind, juice, liqueur and sugar in a small bowl.
4.Serve rhubarb mixture topped with a dollop of mascarpone.
