Honey mascarpone
Method
1.Preheat oven to 180°C. Lightly grease 2 oven trays.
2.Cut four 12cm rounds from pastry. Place on trays. Fold over a 1cm border around each edge, pressing firmly with a fork to seal.
3.In a small bowl, combine sugar, flour and cinnamon. Sprinkle half evenly over pastry rounds.
4.Arrange plum slices over each round. Sprinkle with remaining sugar mixture and dot with butter. Bake 10 minutes.
5.Reduce oven to 160°C. Bake a further 15-20 minutes, until mixture bubbles and begins caramelise. Transfer to a wire rack to cool.
6.To make honey mascarpone, whisk all ingredients together to combine. Spoon a dollop onto each tart to serve.
You can also use puff pastry for these tarts, but you will need to prick the base of each round.
