Method
.Preheat oven to 180°C. Grease a springform (22cm) cake pan with extra butter. Line base with non-stick baking paper, then grease paper.
.Place butter and sugar in a bowl and beat with an electric mixer for 3 minutes, until light and creamy. Sift flour, baking powder and a pinch of salt into a separate bowl. Place eggs and milk in a jug and whisk until well combined.
.Beat flour mixture into butter mixture in 3 separate batches, alternating with egg mixture until just combined (do not overbeat). Spoon into prepared pan and smooth top. Sprinkle with pistachios and place plums, cut-side up, on top.
.Make Topping by placing butter in a small saucepan on low heat. Stir until melted, then remove from heat. Add sugar and allspice, and stir until well combined. Cool slightly in pan, then whisk in eggs. Pour mixture over plums.
.Cook in oven for 60-70 minutes, until a skewer inserted into centre comes out clean, and top is crunchy and golden. Cool in pan for 5 minutes. Serve with cream.
