Method
1.Beat egg whites to soft peaks. Gradually beat in caster sugar until dissolved and meringue is glossy.
2.Spoon 6 meringue nests onto a lined oven tray. Bake in a 140ºC oven for 30-35 minutes.
3.Cool in turned-off oven. Scoop balls from honeydew melon.
4.Mix with icing sugar, zest and lime juice. Top meringue with whipped cream and melon.
