Method

Crumpets

1.In a large jug, sprinkle yeast over water. Set aside for 5 minutes until foamy.
2.In a large bowl, sift combined flour, baking powder, sugar and salt, then add in yeast mixture. Using an electric mixer, beat until sticky and smooth.
3.Heat a lightly greased frying pan on medium. Place four greased egg rings in pan. Spoon batter into rings until one-third full.
4.Reduce heat to low, then cook crumpets for 8-10 minutes until puffed, underside is golden and holes appear on surface. Remove egg rings.
5.Turn crumpets over and cook for 1-2 minutes until golden. Transfer to a rack.

Berry compote

6.In a saucepan, stir sugar, water and vanilla on medium until sugar dissolves. Add apples and simmer for 1-2 minutes. Stir in berries, then remove from heat.

Whipped maple butter

7.Beat butter for 2-3 minutes until creamy. Beat in maple syrup until combined. Serve with hot crumpets and compote.
