Method
1.In a small bowl combine the chia seeds and water, stir and set aside.
2.In a mixing bowl combine the flour, baking powder and sugar.
3.Make a well in the centre, add the chia mixture, and whisk in the milk a bit at a time. Fold in the vanilla and mashed banana and add the melted butter.
4.Melt a knob of butter in a large frying pan and cook spoonfuls of mixture until bubbles form on the surface, flip and cook on the other side until golden brown and springy when lightly pressed. Keep warm until all the batter has been cooked
5.Stack the pancakes and serve topped with sliced banana, a handful of blueberries and a generous drizzle of honey or maple syrup.

- The chia seed mixture is known as a chia egg and can be used in place of an egg in some recipes. – Pour the pancake batter off the tip of a spoon or from a jug to form round pancakes.
