This deliciously sweet and indulgent recipe for cherry chews pairs dark choc chips and glace cherries with lovely coconut! It's a slice that's perfect enjoyed for afternoon tea with a hot cuppa
1.Preheat oven to 180°C. Lightly grease and line an 18 x 28cm slice pan.
2.In a large bowl, combine flour, sugar and coconut. Stir in butter until fully combined. Press mixture firmly into base of pan (see recipe tip).
Topping
3.In a large bowl, combine all the ingredients. Spread mixture over base, then sprinkle extra cherries and almonds over. Bake for 25-30 minutes until light golden brown. Allow to cool on tray.
4.Cut into squares and dust with icing sugar, if desired.
A fork or potato masher can be used to press base into pan. – Store cherry chews in an airtight container.
