Sweet lemon ricotta fritters

Light, golden and crispy, these fluffy lemon and ricotta fritters are beautiful served with a fresh berry dipping sauce for a simple sweet treat.

Method

1.Sift combined plain flour, baking powder and salt into a large bowl. Stir in caster sugar.
2.Whisk in combined ricotta, eggs, liqueur, lemon zest and juice. Mix well. Set aside.
3.In a small saucepan, combine berries, caster sugar and liqueur. Stir over medium heat, until sugar dissolves. Bring to simmer. Cook, without stirring, 3-4 minutes, until liquid reduces by half.
4.Heat enough oil for deep frying in a large saucepan on medium (oil is ready when a small amount of batter sizzles as soon as it is added).
5.Drop heaped teaspoonfuls of batter into oil in batches of 5-6. Fry 4-5 minutes, turning, until puffed and golden. Using a slotted spoon, transfer to paper towel to drain.
6.Dust with icing sugar. Sprinkle with extra lemon zest. Serve warm with raspberry sauce.
