Red cabbage relish
Method
1.To make relish: heat oil in a frying pan on medium. Add cabbage and onion; cook 3-5 minutes, until softened. Stir in vinegar and sugar. Season to taste. Cook further 5-10 minutes, until tender.
2.Preheat grill on high. Spread toast slices with dijonnaise. Spoon relish on 4 slices. Top with gherkins, ham and cheese. Grill 2-3 minutes. Top with watercress and remaining bread. Secure with cocktail picks and cut into three.
