Method
1.Heat oil in a medium saucepan on high. Saute onion and garlic for 3-11 minutes, until tender.
2.Add cumin and paprika and chillies. Cook, stirring, for 1 minute.
3.Add rump steak, beef stock, tomatoes and tomato paste. Bring to the boil. Reduce heat and simmer, uncovered, for 40-45 minutes, until meat is tender.
4.Stir in kidney beans and capsicum. Cook. stirring, for 10 minutes or until capsicum is tender.
5.Serve topped with sliced avocado, sour cream and warm tortillas.
For a faster version, use 500g beef mince in place of steak. Simmer for 15-20 minutes.
