Ingredients

Method

1.Heat oil in a wok or large frying pan on high. Stir-fry garlic and ginger 30 seconds, or until fragrant.
2.Add chicken, in 2 batches. Stir-fry 3-4 minutes each, until golden.
3.Return chicken to wok with sauces, soy and sugar. Stir-fry 1-2 minutes.
4.Add tomatoes and bring to boil. Reduce heat to low and toss choy sum through. Simmer gently, stirring, 2-3 minutes. Serve with brown rice.

Cook brown rice by placing 1 cup of rice in a saucepan. Add 1 1/2 cups of cold water. Bring to boil Stir occasionally. Reduce heat and simmer, covered, 25-30 minutes. Remove from heat and set aside. covered, 5-10 minutes.
