How to properly prepare, cut and store fresh lemongrass

How do you prepare, cut and store lemongrass?

To prepare:

The pale, greeny-white stalk is the part you want, so trim off leafy stalks and the root. Slice longwise down the stalk and remove the coarse outer skin.

For whole stalks:

If using whole stalks, bruise with a rolling pin to release the oils before adding to the recipe.

To chop:

Crush the stalk with a rolling pin or the flat side of a knife, then finely chop or slice depending on the recipe requirement.

To store:

Trimmed lemongrass stalks can be frozen in a resealable plastic bag for future use.
