Watermelon and pomegranate granita

It couldn't be easier to whip up this frozen treat! The sweetness of watermelon and tanginess of pomegranate are the perfect combination, creating an delicious icy cool dessert for warm evenings.

  • 1/2 medium-sized watermelon
  • 1 cup pomegranate juice
  • 2 tbsp lime juice
  • 1/4 cup caster sugar

    Combine flesh of watermelon (seeds removed) and pomegranate juice in a blender, and process until smooth.

    Add lime juice and caster sugar and stir until sugar dissolves.

    Pour into a freezer-proof container and freeze for 2 hours, then scrape mixture with a fork to break into fine shavings. Refreeze for 2 hours before serving.

    Shave with the fork and scoop into glasses.
