Ham, cheese and tomato pancakes
- 1 basic pancake batter
- cooking oil spray
- 6 slices ham, thinly sliced
- 2 tomatoes, diced
- 1 cup grated tasty cheese
Method
Ham, cheese and tomato pancakes
- 1Prepare batter following steps on packet. Season to taste.
- 2Heat a 15cm crepe pan or small, non-stick frying pan on medium. Spray with oil or brush lightly with melted butter. Preheat a grill to high.
- 3Add 1/4 cup measures of batter to pan, swirling to coat base. Cook for 1-2 minutes, until bubbles form on surface. Turn and top with ham, tomato and cheese. Cook for 1 minute. Place under hot grill and cook for 1 minute, until cheese has melted. Repeat with remaining batter. Serve hot.
