Crostini of chicken and duck parfait, or pork and prune terrine, with apple radish slaw

This is a simple and quick option for a platter – ideal as a party canapé or pre-dinner snack. The terrine and parfait on crostini are perfect on their own but I’ve added a crisp apple and radish slaw for a touch of sharpness.

Method

Crostini of chicken and duck parfait, or pork and prune terrine

1.Preheat the oven grill. Brush sliced ciabatta on both sides with oil then toast under the grill on both sides till golden.

Apple radish slaw

2.For the slaw, place the apple and radish in a small bowl. Add the lemon juice, oil and a pinch of salt and pepper and mix well.

To assemble

3.Top half the crostini with a spoonful of parfait. Top remaining crostini with a slice of terrine. Gently place a small amount of slaw on top of each and garnish with micro cress, if using.
