An easy danish pastry recipe your family will praise
Get your bake on and whip up this deliciously simple blueberry danish. Nothing is better than warm pastry filled with fresh or frozen berries and lemon curd!

Ingredients
- 2 sheets flaky puff pastry, defrosted
- 2 tbsp water
- 100 g cream cheese, lightly beaten to soften
- 1 tsp vanilla essence
- 1/4 cup lemon curd
- 3/4 cup frozen or fresh berries – raspberries or blueberries
- 1 egg, lightly beaten
Vanilla glaze
- 1/2 cup icing sugar
- 1 tsp vanilla essence
- 1-2 tbsp milk
- extra icing sugar to dust
Method
- 1Preheat the oven to 200°C. Place 1 pastry sheet on a greased baking tray, and brush the bottom edge lightly with water. Cut the second sheet in half and press to attach half the second sheet to the first making one large rectangle. Brush the edges lightly with water.
- 2In a small bowl mix the softened cream cheese, lemon curd and vanilla. Spread the mixture down one side of the pastry sheet leaving a 1cm border along the far edge. Scatter on the berries.
- 3Fold the pastry over the filling pressing the edges each side to seal. Trim to neaten. Brush with beaten egg and slice vents in the top with a serrated knife to release steam.
- 4Bake in the preheated oven 25 minutes or until golden and risen. Cool. Combine the glaze ingredients and drizzle over the top.
