Ingredients: 4 medium_piece globe artichokes (800g); 1/2 cup (125ml) lemon juice; 1/2 cup (125ml) light olive oil; 2 clove garlic, crushed; 2 tablespoon drained capers, rinsed, chopped coarsely; 1/4 cup coarsely chopped fresh flat-leaf parsley

4 medium_piece globe artichokes (800g)

1/2 cup (125ml) lemon juice

1/2 cup (125ml) light olive oil

2 clove garlic, crushed

2 tablespoon drained capers, rinsed, chopped coarsely

1/4 cup coarsely chopped fresh flat-leaf parsley

Method

1.Trim artichoke stalks to 1cm (½ inch); remove tough outer leaves. Cut 2.5cm (1 inch) off the top of artichokes. Using small spoon, scoop out furry chokes in centre of artichokes.

2.Place artichokes, cut-side down, in steamer. Steam artichokes, covered tightly, about 45 minutes or until stems are tender; cut artichokes in half. Place hot artichokes on serving plates; drizzle with combined remaining ingredients. Season to taste.
