This Thai pork mince recipe is perfect when you want to whip up a quick, tasty meal in a snap. Serve on rice noodles and drizzle with sweet chilli sauce for an easy weeknight dinner
1.Heat the oil in a frying pan. Add the red onion, garlic, lemongrass, ginger and chilli and stir-fry over a medium heat for 2-3 minutes, or until the onion is soft.
2.Increase the heat to medium-high, add the pork mince and cook for a further 3-4 minutes, or until it is brown.
3.Add the curry paste, fish sauce, brown sugar and lime juice and cook for a further 5 minutes.
4.Meanwhile, prepare the rice noodles according to the packet instructions. Drain and divide the noodles between four serving bowls.
5.Top the noodles with the pork mixture, cucumber and herbs. Drizzle with sweet chilli sauce.
