Stir-fried beef, mushrooms and spinach

Ingredients

Beef and marinade
Braised mushrooms
Sauce
To stir-fry

Method

1.Mix beef and marinade ingredients together. Marinate for at least 1 hour. You can do this the day before if you wish.
2.Place mushrooms in a pot, cover with hot water and soak for 1 hour. Drain then remove and discard stems using scissors. Return mushrooms to pot, add remaining ingredients, cover with water and bring to the boil. Reduce heat and cook until tender (about 20 minutes). Cool contents of pot and store in fridge until ready to use. This can be done the day before. Drain mushrooms and slice when you are ready to use them.
3.Place sauce ingredients in a jar and shake to combine. This can be done the day before.
4.To stir-fry, heat 1 tablespoon peanut oil in a large frying pan or wok and batch cook the beef for 1-2 minutes on both sides.
5.Wipe out pan, heat 2 tablespoons peanut oil and sauté onion, garlic and ginger. Add spinach and cover with a lid for a minute or two until spinach is wilted.
6.Add mushrooms, beef and sauce and toss to combine.
7.Serve on rice and garnish with spring onions.

Check label of soy sauce if eating gluten-free.
