1.Spray the steaks with oil and season well. Sear them in a frying pan or on the BBQ grill for 2–3 minutes. Remove from the heat and allow to rest before slicing across the grain.
2.In the same pan, add the beets and balsamic glaze. You can make your own glaze with 3 tbsp balsamic vinegar and 2 tbsp brown sugar. Add a few tablespoons of water and simmer the beets until heated through and starting to caramelise.
3.Meanwhile, boil the potatoes for 10-15 minutes until al dente, then add the kale and continue to cook for 1 minute until wilted.
4.Drain well and place on a large serving platter. Top the potatoes with the balsamic beets, feta cheese, sliced beef and toasted pumpkin seeds.
