Tender chicken is tossed with crunchy broccolini and fresh Asian vegetables in a sweet, sticky plum sauce to create this beautiful stir-fry. Serve hot with noodles for a quick, tasty dinner idea.
1.Soak noodles in boiling water in a large heatproof bowl 3-4 minutes, or until just soft. Stir to separate strands. Drain.
2.Heat a wok or large frying pan over high heat. Add oil; swirl to coat surface. Add onion, garlic and ginger. Stir-fry 3 minutes, or until just soft. Add chicken, in batches. Stir-fry 4 minutes, or until seared.
3.Add capsicum and carrot to wok. Stir-fry 2 minutes. Add broccolini. Stir-fry 1 minute. Add sauce and water. Stir-fry further 1 minute, or until sauces boils.
4.Sprinkle with sesame seeds. Serve with noodles.
Remove stir-fry from wok as soon as it’s cooked to avoid overcooking Have all ingredients measured and sliced before you begin to stir-fry.
