Lemon honey chicken with broccolini

This sweet and sticky lemon honey chicken is made up of ingredients you probably already have in your kitchen and is fantastic accompanied with quinoa and broccolini for a tasty midweek meal.

Method

1.Finely grate lemon rind, then juice 2 lemons – you will need 1 tablespoon rind and 2 tablespoons juice. Halve chicken horizontally.
2.Place chicken in a bowl with lemon rind and pepper. Season with salt flakes and turn to coat both sides.
3.Rinse quinoa in a sieve under cold running water. Place in a medium saucepan with 2 cups water. Bring to the boil, then reduce heat to low and cook, covered, for 15 minutes or until tender. Remove pan from heat. Stand, covered, for 5 minutes.
4.Heat half the butter and 2 tablespoons oil in a large, nonstick frying pan over high heat. Cook chicken in batches for 3 minutes on each side or until golden and cooked through. Remove from pan and cover to keep warm.
5.Heat remaining butter and remaining oil in same pan. Cut broccolini in half lengthways and add to pan. Cook, turning, for 3 minutes or until tender. Season.
6.Whisk honey, lemon juice andthe extra oil in a small bowl, then season to taste. Cut remaining lemon into slices.
7.Serve chicken and broccolini topped with lemon slices and drizzled with honey dressing. Accompany with quinoa.

Remove chicken tenderloin from the underside of the chicken breast, if attached.
