Method
1.Mix mayonnaise, sour cream, mustard, dill, parsley, honey, lemon and salt and pepper to taste in a bowl. Cover and refrigerate until needed.
2.Preheat oven to 200°C. Remove pin bones and place salmon in a roasting dish. Pour over combined oil and lemon juice and season with salt and pepper.
3.Cook salmon for 10 minutes, then remove from the oven. Just before serving brush with melted butter and place under the grill for 2 to 3 minutes.
4.Serve salmon with dill honey mustard sauce and vegetables or salad.
