1.Cook rice in a large saucepan of boiling, salted water according to packet directions. Drain and keep warm.
2.Meanwhile, heat a lightly greased frying pan on high. Cook chicken for 1 minute each side, until browned. Sprinkle soup mix over chicken and stir in nectar. Add capsicum and cook on medium heat for 10 minutes, covered, until chicken is cooked.
3.Spoon over sauce and sauce with rice.
