Grilled persimmons with mascarpone and candied walnuts

Method

1.Preheat oven to 180°C.
2.Halve persimmons diagonally and place cut side up in a baking dish.
3.Pour water into the base of the pan and drizzle fruit with honey.
4.Cover loosely with foil and cook for 30 minutes, until the persimmons are tender but still holding their shape. Remove foil and switch the oven setting to grill.
5.Spoon some of the honey liquid from base of the dish over the persimmons. Grill for 5 minutes, or until the surface is bubbling and starting to colour.
6.While persimmons are cooking, melt the butter in a large frypan. Add walnuts and sprinkle over the brown sugar. Cook, stirring until sugar melts and the walnuts are coated in caramel. Allow to bubble for 5 minutes, taking care they don’t burn, before transferring to a board lined with baking paper to cool.
7.In a small bowl mix together mascarpone, icing sugar and vanilla.
8.Serve persimmons with a dollop of mascarpone and a sprinkle of walnuts.
