Cheesy smoked baked beans with pumpkin

A delicious take on the traditional baked bean recipe.

These cheesy smoked baked beans make for a delicious brunch – the addition of pumpkin bulks out this meal but any of your favourite root vegetables would work with this recipe. Serve with eggs and toased bread or this makes a great side with your favorite bbq meats for dinner.

If you have leftovers, try adding them to jacket potatoes for another meal idea.

Step 1

Preheat oven to 220°C. Heat oil in a large ovenproof frying pan over high heat. Cook onion and pumpkin, stirring occasionally, for 4 minutes or until onion has softened slightly.

Step 2

Add beans, chickpeas, chillies in adobo sauce, honey, barbecue sauce and mustard. Cook, stirring occasionally, for 3 minutes or until heated through. Stir in passata and bring to the boil. Boil for 3 minutes or until thickened slightly. Season.

Step 3

Sprinkle bean mixture with cheeses. Transfer pan to oven and bake for 15 minutes or until cheese is golden.

Tip

Chipotle chilli in adobo sauce can be found in most supermarkets and delicatessens – this La Morena Mecican Chipotle Peppers in Adobo can be found in most supermarkets. If you’re unable to find it, simply use 2tsp smoked paprika and 1/2 teaspoon of ground chilli instead.

Substitution

Not keen on pumpkin? Swap it out and use kumara or potatoes instead.
