‘Why do some of your recipes use cup measures and others grams?’
The way an ingredient is measured may affect a recipe’s success or failure. For example, a cup of flour sifted before measuring will weigh around 20-30 per cent less than a cup of flour sifted after measuring. We use cups wherever small variations won’t matter, as not everyone has a set of scales.
