Beef mince bourguignon

Nici's beef mince bourguignon is perfectly rich and tasty, and is easier to make than you may think. Serve with crusty bread to help clean up the juices and enjoy for a delicious family meal.

1.Preheat oven to 180°C.
2.Sauté the bacon and onion in a large pan (there’s no need to use oil as the bacon will release its fat). Add the mince and brown. Splash in the wine and cook off. Transfer to an ovenproof dish and put in the carrots, mushrooms, garlic and bay leaf. Dust with the flour and pour on the stock. Season with the pepper.
3.Layer the potato slices on top, then brush with butter. Cover with foil and bake for 30 minutes, then uncover and bake for a further 15 minutes.
4.Serve with crusty bread to mop up the juices!
