Method
Raspberry and rosewater
1.Combine raspberries and sugar and mash slightly to release juices then set aside for 15 minutes. Meanwhile, sprinkle gelatine over ½ cup of the water and let it swell for 5 minutes then gently heat in microwave at 10-second intervals or in a double boiler, stirring until dissolved.
2.In a large jug combine the remaining water, dissolved gelatine, raspberry mixture and rose water. Mix well then spoon raspberries into the serving glasses and top up with the liquid. Refrigerate until set.
Blueberry and lime
3.Combine blueberries and sugar and mash slightly to release juice; set aside for 15 minutes. Sprinkle gelatine over ½ cup of the water and let it swell for 5 minutes then gently heat in the microwave at 10-second intervals or in a double boiler, stirring until dissolved.
4.In a large jug combine the remaining water, dissolved gelatine, blueberry mixture, lime zest and juice. Mix well then spoon the berries into serving glasses and top up with the liquid. Refrigerate until set.
Cherry and vanilla
5.Combine the roughly chopped cherries and caster sugar then set aside for 15 minutes to let the juices release. Meanwhile, sprinkle gelatine over ½ cup of the water and let it swell for 5 minutes then gently heat in the microwave at 10-second intervals or in a double boiler, stirring until dissolved.
6.In a large jug combine remaining water, dissolved gelatine, cherry mixture and vanilla. Stir well. Spoon cherries into serving glasses and top up with the liquid. Refrigerate until set.
