Traditional vegetarian risotto with a twist ... pearl barley replaces the rice. But for risotto purists, you can simply substitute the barley for Arborio rice.
It’s hard to beat a cold lemon drink when you are hot, or a hot lemon drink when you have a cold. Nana’s homemade lemon, barley and ginger cordial (or ‘squash’ if you prefer) is perfect for both.
If liked, use 1/2 cup soup mix, rice or pasta instead of barley. Cook rice or pasta for 10-12 minutes until tender. You could also add some chopped potato to soup for the last 20 minutes of cooking. Note
