Why we’re melting over flavoured butter

Just when you thought butter couldn't get any better! All it takes is a couple of ingredients to create versatile, delicious flavoured butter. Discover how - it's easy.

At this time of year, Kiwis are all about barbecuing. Whether it’s a simple sausage thrown on the grill or an elaborate multi-course feast, there is nothing quite like food cooked alfresco on the barbie.

The key to a good barbecue is flavour. Marinating your meats and vegetables is a great way to inject some extra tastiness, but if you’re short on time, why not try a flavoured butter? They’re easy to create, can be made in advance, and will infuse your barbecued food with a sensational taste.

Simply take 100g of softened butter, finely chop your choice of added ingredients, and combine in a bowl. Mix through, then turn out onto plastic wrap or greaseproof paper. Shape into a log, then wrap tightly and chill.

It will keep in the fridge for up to 10 days, but can also be used straight from the freezer. Simply slice and use to top your grilled meats and vegetables just before serving.

Some combos to try:

Caper, anchovy and chive

Suits beef and lamb.

Semi-dried tomato, olive and basil

Suits beef, lamb and fish.

Chilli, lemon zest and coriander

Suits chicken and seafood.

Ginger and shallot

Suits chicken and seafood. Gently fry the ginger and shallots before adding to the butter.
