How do you make pea puree? I always see it on cooking programmes but mine always comes out revolting!

Dear Jan,

Saute an onion with a little garlic in oil or butter. Add vegetable or chicken stock and bring to the boil. Add peas to the mix and cook as normal.

Drain peas, keeping the stock, and mix the pea and onion mix in a blender carefully, keeping your hand on the top – remember, heat will make it explode if you don’t keep a grip on it and you’ll end up with pea ceiling! once pureed, return the mixture to the pot, and add stock slowly until it’s the right consistency. Add butter for that extra special something, then season with salt and pepper.
