How to pair food with Champagne

1 Do a thorough tasting of the Champagnes before you begin.

2 Fish is an obvious match with Champagne, so it’s a good idea to start with fish dishes in mind.

3 Don’t start with overly elaborate dishes, rather begin with an idea and layer it as you go along.

4 Seasoning, fat content of dishes and acid levels (lemon, lime, vinegar) can all make a big difference to a pairing working well.

5 Don’t be afraid to try anything. Champagnes can be very versatile and work very well with red meat dishes, just study up on the Champagne beforehand so you fully understand its characteristics.
