How to serve swede

Swede has a surprisingly delicate flavour perfect for side dishes, says Sara Bunny.

Round, squat and a bit rough around the edges, swedes are often overlooked in the vegetable shop. But with their delicate flavour and satisfying texture, they can easily be transformed into something tasty. This versatile root vege is packed with potassium and magnesium, and thrives on a good frost, making chilly Southland the swede capital of the country.

For a delicious swede side dish, simply peel, cut into wedges and roast in the oven for 35-40 minutes, then stir though one tablespoon of honey and one teaspoon of cumin seeds, before roasting for another 10 minutes. Serve with coriander and chopped chilli… and get in quick before it disappears!
