Olive oil & rosemary schiacciata with wild mushrooms

Olive oil & rosemary schiacciata with wild mushrooms

Schiacciata is a Tuscan-style flatbread traditionally made with flour, yeast, salt and water – I’ve added a little rosemary for variety. It’s baked in the oven then brushed with olive oil once it comes out. Use wild mushrooms if available but otherwise substitute whatever mushrooms you have access to. Lardo is a salami that has been made since the time of the Ancient Romans from cured fat, rosemary and spices. Use fresh broad beans in season; at other times, use frozen ones, which are just as good.

Bocadillo de chorizo a la parrilla

These tartines or toasts, piled high with gorgeous Niçoise salad ingredients, make a delicious lunch – fresh, tangy and salty, mouthful after mouthful. Fancy prune skewers

Fancy prune skewers

Whatever you call these, devils or angels, back in the 1980s we’d fight for them as kids. This version is a little more substantial than my mother’s but I’ve certainly carried on her tradition of soaking the prunes in port or sherry overnight. I’m not sure if it was the boozy prunes or the crispy bacon that we adored so much, and I don’t really care – they’re just insanely moreish. Recipe by Fiona Hugues.
