Zucchini soup with cheesy croutons

This warming Italian-style soup is a great family meal for when zucchini are in season and cheap. For some added Italian flavour, use a good parmesan instead of the cheese mix.

Ingredients

Method

1.Heat oil in a large saucepan on medium. Saute onion, bacon and garlic for 4-5 minutes, until onion is tender.
2.Add zucchini and stock to pan. Bring to a boil and simmer for 15-20 minutes, until tender.
3.Meanwhile, preheat grill to hot. Arrange bread on a foil-lined tray. Sprinkle with cheese. Grill for 2-3 minutes, until cheese melts.
4.Use a hand blender or food processor to process soup until slightly chunky. Season to taste. Serve soup with cheesy croutons.
