White bean and tuna salad

Colourful and crunchy, this dish has everything you want from a salad, including tuna, beans, tomatoes, cucumber, spinach and parsley.

Ingredients

White bean & tuna salad
  • 425 gram can tuna in springwater, drained, flaked
  • 400 gram cannellini beans, drained, rinsed
  • 200 gram baby heirloom tomatoes
  • 1 red onion, thinly sliced
  • 1 lebanese cucumber, chopped
  • 60 gram baby spinach leaves
  • 2 cup parsley, chopped
  • 1 tablespoon pumpkin seeds
Creamy balsamic dressing
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lite mayonnaise
  • 1 tablespoon lemon juice
  • 2 teaspoon wholegrain mustard

Method

White bean & tuna salad

    In a large bowl, combine tuna, beans, tomatoes, onion, cucumber, spinach and parsley.
Creamy balsamic dressing

    In a small jug, whisk all the ingredients together. Season.

    Pour dressing over salad and toss gently. Serve sprinkled with pumpkin seeds.

Notes

If you like, include mint leaves and carrot or capsicum sticks – they’ll add minimal kilojoules.
