Watermelon, feta and prosciutto wraps

This watermelon, feta and prosciutto wraps recipe is so light and refreshing, it's the perfect way to start off your Christmas Day menu! Plus, you can't beat the festive colour combo of this dish

  • 10 slices prosciutto
  • 1 kilogram (1/4 large) watermelon
  • 150 gram feta, thinly sliced
  • 20 mint leaves

    Cut each slice of prosciutto in half lengthways so you have 20 lengths.

    Remove melon rind and seeds. Slice melon into 4cm long x 2cm square rectangles. Top melon with a small piece of sliced feta and a mint leaf.

    Wrap a length of prosciutto around each portion and arrange wraps on a platter. Insert a toothpick into each parcel to secure. Chill until ready to serve.


  • Any kind of melon works for these wraps – try rock or honeydew for a change.
