Vegetable noodle stir-fry

A healthy, quick and simple vegetable stir fry. Eating a mixture of different coloured vegetables is a great way to get a nutritional boost.

Ingredients

Method

1.Cook noodles following packet instructions, omitting flavouring sachet. Drain well.
2.Heat oil in a wok or large frying pan on high. Stir-fry onion, carrot, capsicum and garlic 3-4 minutes, until just tender.
3.Add buk choy and mushrooms to pan. Stir-fry 1-2 minutes, until buk choy is beginning to wilt.
4.Toss noodles into pan with sauces. Stir-fry 1 minute, until heated through.
5.Serve topped with peanuts and onion. Accompany with extra soy sauce and chilli.

Use any fresh or dried noodles in place of the instant variety. Prepare according to packet instructions.
