Vegan fairy floss hot chocolate

This deliciously sweet hot chocolate is the perfect treat

  • 1/4 cup Dutch-processed cocoa (or cacao)
  • 1/4 teaspoon ground cardamom
  • 2 1/2 cups almond milk
  • 6 medjool dates, pitted and finely chopped
  • 1 tablespoon unrefined sugar
  • 1 teaspoon vanilla bean paste
  • 2 teaspoons rose water
  • 2 tablespoons pistachios
  • 1 tablespoon cacao nibs
  • Fairy floss and fresh or dried rose petals, for decorating

    Place Dutch-processed cocoa (or cacao) and ground cardamom in a medium deep saucepan.

    Slowly whisk in almond milk until well combined.

    Add medjool dates and unrefined sugar, slowly bringing to the boil over low heat.

    Using a stick blender, blend on low-speed until smooth.

    Stir in vanilla bean paste and rose water until combined (adjust rose water to taste, as brands vary in strength).

    Pour into two large mugs. Top each mug with a handful of fairy floss, pistachios, cacao nibs and fresh or dried rose petals, if you like.
